Well, hello there.

Gosh, where do I even start? It has been forever since I have made a new post. Thank you to all of my followers that have stuck around. I love you all. 

I’m still on my journey to lose weight. I actually gained some back. 25 pounds to be exact. I’m not happy about it but I want to be honest with all of you. It all went downhill last October. The local gym that I had been going to got shut down and then my husband and I left for Atlanta a few weeks later and were there for 5 weeks. I had access to a gym while we were there and we had a kitchen in our hotel room so I had managed to hit my lowest weight yet while we were there. Then some things happened that caused me a lot of stress and because of that I had some old habits creep back up on me and started to gain some weight back. I gave up on myself. The middle of this past August I had finally had enough and started to get control of my health again. I now have 15 more pounds to lose and then I’ll be back to that lowest weight.

My promise to all of you is to start posting again. It may not be everyday but I promise at least a couple times a week. I have tons of healthy recipes that I’ve been trying out lately that I want to share with all of you. Like healthy baked chicken tenders that are so good you almost won’t miss the fried version. So please, don’t give up on me. Stick around, I promise to make it worth your while.

New cardio workout I have been doing about once a week at the gym! When I do it, I burn close to 750 calories and I am absolutely DRENCHED in sweat (which is good!).

Crunchy Veggie Wrap

Slice up:

  • some red cabbage
  • 1 carrot
  • 1 red bell pepper
  • 1 cuccumber (take out the inside seeds)
  • 1 tomato

Then assemble the wrap by layering the veggies:

  1. hummus
  2. tomato
  3. red bell peppers
  4. cuccumbers
  5. carrots
  6. red cabbage
  7. alfalfa sprouts
  8. crumbled feta cheese (you can use any other kind of cheese)
  9. salt and pepper
  10. tabasco sauce (optional)
  11. fresh spinach leaves

Wrap it up & you’re done!

So good you won’t even realize how healthy it is. Great for school, college, work, on the go. Prepare the ingredients a day ahead to make your mornings a breeze.

I went out to dinner this past Tuesday and didn’t eat the greatest but thanks to my dear friend Fat Fighter, I didn’t have to worry about all of the extra fat and carbs that I consumed! I actually was down 1 pound the next morning!

saw your post on before and after pictures. you are amazing. i'm struggling with losing the 25 or so pounds i want to lose but to see that you've already lost over 70 pounds and aren't stopping anytime soon is simply inspirational. i know it won't be easy but seeing people like you keeps me moving. congratulations and good luck! :)

Hey there! I've recently seen your before and during picture. First of all you're amazing for what you've accomplished and even though I don't know you I'm very proud of you! That's just so awesome! My question for you and I hope its not to personal but how has your skin bounced back from the weight being lost, like is it loose or anything? Lol if you get what I'm saying. I'm in the process of losing weight too and I'm concerned with sagging skin.

Thank you so very much! My skin has bounced back fairly well. My biggest problem area is my arms but they are slowly improving. Doing some weight lifting 3-4x a week is helping out a lot. As long as you’re losing weight at a healthy rate and incorporating weight lifting then your skin will bounce back but it just takes time. I know that I will probably still have some loose skin no matter what but I’m not too concerned about it. :)

Hey I was just wondering where you find motivation to keep going? Im trying lose some weight and get healthier for quite a few reasons, but I always find myself getting lazy!

A lot of my motivation comes from the fact that I never want to go back to the person I used to be. I’m a much happier person now that I’ve lost weight and I wake up knowing that all of my hard work is paying off. It also helps to look at pictures of myself from before and remind myself how unhappy I was back then. :)
